30 Minute Chicken Curry
Indulging in a warm bowl of homemade chicken curry - the ultimate comfort food! Flavorful spices, tender meat, pure satisfaction, far better than any takeaway in my opinion

Add 1 tbsp oil to a pre-heated med-high pan, then add in your chicken and sear off in batches for 2-3 mins before setting aside.

In the same pan, add the onion, chilli’s and spices then sauté for 4-5 mins until browned and fragrant, then add the pepper and sauté 2 mins.

Add in tomato puree and cook for 3 mins before adding in a tin of tomatoes and your chicken, reducing heat to low.

Pour in 250-300ml of chicken stock and leave to simmer for 20/30 mins. Once cooked, add a handful of chopped coriander and check the seasoning.

Serve with rice and an extra sprinkle of coriander.
