Ronan & Aoibhe’s Shortbread
One of the easiest recipes you will make and perfect with a big mug of tea!

Preheat the oven to 170 degrees.

Beat the butter and the sugar together until smooth.

Stir in the flour until smooth. Turn on to a work surface and gently roll out until the paste is 1cm thick.

Cut into shortbread rounds or fingers and place onto a baking tray. Sprinkle with caster sugar and pop in the fridge for 15/20 minutes.

Bake in the oven for 15–20 minutes, or until pale golden-brown. Cool on a wire rack.
Notes
I always make these for the kids lunch boxes as they keep for around a week in an airtight container.
