Perfect for lunches. I normally make a double batch and portion it up for the freezer.

    Heat a large pot with a drop of oil and fry the bacon for 5/6 minutes.

    Add all the other ingredients and 2 pints of water. Simmer for 15/20 minutes.

    Blitz the soup with a hand blender or table top blender, season and serve with some crusty bread.
