Curried Sweet Potato Soup

Super easy, healthy soup! Proper comfort food! Perfect for lunches and easy on the pocket.

    Melt in 1 tbsp olive oil then add the onion. Fry until soft and golden then add in garlic and ginger. Fry for another couple of mins then add in the curry powder and rest of the spices. Toast for a minute.

    Add in the sweet potato then pour in stock and coconut milk. Mix then simmer for 20-30mins, or until the sweet potato is cooked right through.

    Turn off heat and use a hand blender to blitz until smooth.

    Season with S&P

    Serve with a drizzle of coconut milk, crispy onions and coriander.
