Chicken & Chorizo Pie

This pie just works! Tender chicken, spicy chorizo and flaky puff pastry.

    Heat the oil in a pan or skillet dish.

    Brown the chicken thighs in batches until golden.

    Add the onions and cook for 5 mins until soft, then add the chorizo and paprika and cook for 2 mins more until the oils are released into the pan.

    Stir in the flour for 1 min, then add the stock, cover with a lid and simmer for 40 mins or until tender.

    Pour the mixture into a pie dish.

    Heat oven to 180 degrees.

    Brush a little beaten egg around the rim of the pie dish then roll the pastry over the pie.

    Crimp the edges with a fork and trim away any excess pastry.

    Brush with a thin layer of beaten egg.

    Bake for 30 mins or until golden brown and the filling is piping hot.

    Serve with your creamy mash and vegetables.
