Swiss Meringue
A combination of egg whites, sugar, & vanilla warmed, then whipped to perfection. Makes for a silky smooth texture with a light marshmallow flavor that’s heavenly!

In a heat proof medium size bowl add the egg whites & sugar, mix well.

Create a double boiler by adding 1-2 inches of boiling water in a small pot & setting the bowl with egg white mixture on top.

Keep the water simmering & whisk the mixture constantly until the sugar has melted, the mixture is hot to the touch & is a pale white color. About 10-15 minutes.

Pour the mixture into a large bowl or the bowl of a stand mixer, add the vanilla & begin to whip on high speed for 7-10 minutes or until the meringue holds a firm/stiff peak.

Once the meringue holds a peak it’s ready to be used!
Notes
Toast the meringue with a cooking torch or under the broiler for a toasted marshmallow flavor. This meringue holds up very well, you can use a pipping bag & tip for detailed designs.
