Thai Inspired Sausage Curry

    Heat half the oil in a pan and add the sausages. Colour the sausages all over then set them aside.

    Add the remaining oil and onion. Soften for 5 minutes before adding the dried spices, ginger, garlic and chilli.

    Stir for a minute then add the coconut milk and the brown sugar.

    Return the sausages and simmer for 20 minutes.

    Squeeze in the juice of 1 lime and serve the curry topped with fresh Thai Basil, the sliced spring onions and extra lime wedges.
