Chicken, Chorizo & Chickpea Tray Bake

Alternative to chicken, leek, bacon & bean tray bake, using 7 ingredients and quick to make.

    Heat an oven proof pan on the hob and add the chicken skin side down. Season well on the underside. Leave for 5 minutes until the skin is coloured and crisp. Sprinkle the smoked paprika over the skin and set aside.

    Pour out any fat from the pan. Add the chorizo and colour for a minute then add all the remaining ingredients. Return the chicken to the pan so the skin sits proud.

    Pop in the oven at 180 fan for 45 minutes.

    Stir through spinach at the end if you like.


Notes

Serve with baked potatoes, mash, pasta, or rice. Feel free to leave out the spinach and serve with a green veg on the side.
