Cod, Chorizo & Butter Bean Tray Bake
This is an absolutely delicious one pan meal that takes minimal time to prep, very little time to cook and doesn’t really require any side if you throw in asparagus or another green veg such as courgettes, frozen peas or edamame beans.

Add a tiny amount (1 tsp oil) to a pan & add the chorizo. Colour on each side for a couple of minutes then set aside.

Add the sliced leek & sun-dried tomatoes. Add a little of the oil from the jar.

Add the garlic, stir, then add the butterbeans.

Stir in the oregano and squeeze in the lemon.

Add the stock and bring to a simmer.

Season the cod with the smoked paprika, salt and pepper and nestle each fillet into the pan.

Add the asparagus and reserved chorizo to the pan. Drizzle with a little olive oil.

Bake in a 180 fan oven for 12 minutes.
