Chicken, Broccoli & Pasta Cheesy Bake
This hearty recipe was inspired by Broccoli Cheese which I love to make as an alternative to cauliflower cheese to go with roasts through the colder months. Adding chicken and pasta elevates it from a side dish to a main. And for an easy vegetarian bake, just leave out the chicken! Happy Monday everyone!

Cook the chicken with some seasoning for 5 minutes until just coloured then set aside.

Add the leeks and 1 tbsp of the butter to the same pan and colour for 5 minutes then set aside with the chicken.

To make the cheesy sauce, add the remaining 3 tbsp butter to a pan and once melted add the flour. Stir to make a roux. It’ll look lumpy! Fear not. Gradually whisk in the milk until smooth.

Add the Dijon mustard along with 2/3 of the grated cheese to the white sauce and stir off the heat until the cheese has melted.

Cook the pasta for 7 minutes then add the broccoli to the same pan for 3 minutes. Drain.

Combine the pasta, broccoli, chicken and leeks in an oven proof dish.

Pour over the cheese sauce.

Top with the remaining cheddar and bake for 35 minutes at 185 fan.
