Smokey Cauliflower Cheese
A new take on the classic cauliflower cheese recipe with smoked paprika and a quick cheese sauce method.

Bring a large pan of salted water to the boil and add the florets. Reduce to a simmer and cook for 5 minutes then drain. Set aside.

Add the milk, butter, flour, paprika & garlic to the pan and whisk on a low heat. Keep whisking as the sauce heats until the sauce is smooth. Simmer stirring every minute for 5 minutes.

Stir through 3/4 of the cheese leaving the rest to sprinkle on top.

Arrange the cauliflower in an ovenproof dish. The cauliflower needs to not be steaming when the sauce is poured on so the sauce doesn’t run off.

Pour over the cheese sauce and sprinkle over the remaining cheddar.

Roast at 180 fan for 30-40 minutes or until the top is golden and bubbling.
Notes
Can be made ahead and reheated when needed. Freezes well. Extra cheese sauce can be frozen or kept in the fridge for a couple of days.
