A great speedier alternative to a beef bolognese.

    Soften the onion & garlic for 5 minutes.

    Add the spices and the sausage meat squeezed out of their skins.

    Break down the sausage meat with a wooden spoon.

  4. 4

    Colour for the mixture for 10 minutes.

  5. 5

    Add the wine to the sausage mix, let it bubble then add the chopped tomatoes or Passata.

  6. 6

    Simmer for 15 minutes, longer if you have time.

  7. 7

    Serve with grated Parmesan and fresh basil or oregano.
