Roast Potatoes
Perfect roast potatoes method for Sunday roast.

Peel 2kg Maris Piper or King Edward potatoes.

Cut the potatoes into 6x4cm in size.

Rinse the potatoes, cover with cold water in a pan adding 1/2 tsp salt.

Bring the water to the boil & simmer the potatoes for 8 minutes exactly.

Drain the potatoes. Allow to steam dry for a few minutes.

Put a roasting tray on the hob & heat 5 tbsp fat or oil.

Check the potatoes are fluffy. You don’t want them falling apart so add the fluffy ones to the hot oil using tongs & shake those left in the colander gently then add those to the tray.

Season with salt. Turn each potato in the fat.

Roast at 200 degrees (180 fan) for 1 hour turning the potatoes once during the cooking time.

Add chopped rosemary 10 minutes before the end of the cooking time or at the end & season again.
Notes
You can freeze them too. Make extra & keep a container in the freezer which you can add to whenever making roasties. They can be reheated from frozen in a hot oven or air fryer for 10 minutes.
