A creamy green peas filling for tartlets or other desserts.

    Soak gelatin sheets in cold water for at least 10 minutes.

    Combine all ingredients in a sauce pan and boil for 7-8 minutes.

    Transfer mixture to a blender and blend until smooth.

    Pass mixture through a fine sieve.

    Add soaked gelatin sheets to the mixture and stir with a whisk.

    Transfer mixture to a piping bag.

    Pour mixture into a mold of your choice.

    Let it set in the fridge for 30 minutes, then in the freezer for at least 3 hours.

    Unmold at least 20 minutes before serving.

This recipe works perfectly with many other spring and summer vegetables.
