Fig Leaves Tuile
Definitely one of the brightest and most aromatic tuiles you can make this season to bring your dishes to the next level!
Ingredients

Fig leaves oil

Clean the fig leaves and cut the central part of each leaf, which contains a lactose liquid that is not edible.

Put the leaves into a powerful blender and add the neutral oil, then blend until the oil reaches the temperature of 65C degrees due to the friction of the blades.

Pass the oil through a fine sieve with a kitchen cloth on and let it drain straight into a really cold bowl to keep the color super bright.

Mix the fig leaves oil together with the flour, the egg white, the sugar and the salt.

Transfer the batter into a piping bag and spread it on your favorite mold, then spread the batter evenly on the surface removing any excess.

Bake it in the oven at 150C degrees for about 7 minutes.

When still hot, remove it from the mold and put it on a round surface, then bake it once again in your oven for about 6 minutes.

As soon as it cools down it’ll be ready to be used, but you can always dry it in your oven at 70C degrees for about 1 hour and keep it covered for later.
