Sausage Leek & Lentil Soup
This is like a great big hug in a bowl.

Heat a drizzle of oil in a non-stick saucepan with a lid

Slice the skins of the sausages and pull out the meat, discarding the skins.

Tear each sausage into 8-10 small pieces and drop them in the oil.

Fry for 3 minutes, moving them around the pan so they don't stick.

Add the leeks and fry for 3 minutes until soft.

Stir in the flour and fry for 1 minute, stirring until it disappears.

Slowly add the stock a little at a time, stirring continuously and bringing it to the boil before adding more.

Add the milk, oregano, lentils.

Season with salt and pepper, bring to the boil and simmer for 5 minutes.

Divide between 4 bowls and serve with buttered bread.
