Halloween Bolognese Yorkshire Pud Pies
A great way to use up leftover bolognese

Heat the oven to 180C

Make the bolognese: heat a drizzle of oil in a large non stick frying pan. Add the onion and fry for 5 minutes until soft.

Add the beef mince and fry until browned all over. Drain any excess fat.

Add the flour, garlic and oregano. Give it a good stir and fry for 1 minute on a medium heat.

Slowly add the stock a little at a time. Stirring continuously on the heat, only adding more when it comes to the boil.

Stir in the tinned tomatoes and season with salt and pepper.

Bring to the boil, simmer on a medium to low heat for 15 minutes or until the sauce has reduced and the beef is cooked through.

Cut out 4 pumpkin shapes from the pastry (Check it will cover the top of the yorkshire pudding) Brush them with beaten egg and place them on a lined baking tray.

Bake in the oven for around 15 minutes or until golden brown and crisp.

Divide the hot bolognese between the yorkshire puddings and top each one with a slice of cheese.

Place the filled yorkshires on a baking tray and in the oven for 5 minutes, until the yorkshires are heated through and the cheese has melted.

Top each pudding with a pastry pumpkin and serve!
