Cheesy Cajun Chicken Loaded Wedges
This is weekend comfort food. It's one of those really simple, really tasty dinners that makes just a little bit of chicken go a REALLY long way!

Heat the oven

Place the wedges on a baking tray and cook to packet instructions.

Heat a drizzle of oil in a large non-stick pan.

Add the red pepper and onion. Fry for 5 minutes on a medium heat, stirring regularly.

Stir in the tomato paste for the last minute.

Stir in the flour and cajun spice and fry for one minute, stirring until the flour is absorbed.

Add half the chicken stock. Bring it to the boil, stirring continuously. Add the second half when it comes to the boil and bring it to the boil again.

Season with salt and pepper.

Stir in the shredded chicken and frozen sweetcorn.

Bring the mixture to the boil, simmer on a low heat for 3-5 minutes until heated through.

Put the cooked wedges in an ovenproof dish.

Pour the chicken and sauce evenly over the wedges and top with grated cheese

Place under the grill for around 5 minutes or until the cheese is melted.
