Cheat's Chicken Kiev Flatbreads
A version of chicken Kiev with all the wonderful flavours, but none of the effort.

Place the cornflakes in a sealable freezer bag and use a rolling pin to crush them to a breadcrumb size.

Tip the crushed cornflakes onto a plate.

Place the beaten egg and flour into two separate bowls.

Cut the chicken breast in half widthways, so you have 4 thin chicken breasts.

Roll the chicken breasts in the flour until coated.

Dip them in the beaten egg, then roll them in cornflake crumbs until coated.

Heat a drizzle of oil in a large, non-stick pan.

Fry the chicken on a medium heat for around 7-10 minutes, turning regularly until golden brown and cooked through.

Place the butter, garlic paste and parsley in a small microwavable bowl. Season with salt and pepper.

Microwave the butter until just melted. Give it a good stir.

Microwave the flatbreads for a few seconds to warm them through.

Brush the top of each flatbread with some garlic butter. Top with a smear of mayonnaise, lettuce and cucumber.

Slice up the crispy chicken and place it on top of the salad.

Finish with a generous drizzle of parsley butter and some parmesan cheese if you like.
