Crispy Peri Chicken Sandwich
This was full of flavour crispy coated peri chicken, layered on a ciabatta roll with mozzarella cheese, a homemade creamy peri sauce, lettuce, tomato and onion for a burst of freshness a quick and easy recipe to throw together to satisfy those cravings

Season the chicken breasts all over with a tsp of peri seasoning. Use the remaining tsp of peri seasoning to toss with the crushed cornflakes.

Dip each chicken breast into the egg, shake off the excess egg before dipping into the cornflakes. Press in to adhere before air frying at 185 degrees celsius for 16 minutes. When there is 2 minutes remaining, add the cheese slices. Alternatively, bake in the oven for 20 minutes.

Bake the ciabatta rolls according to packet instructions.

In a bowl, mix together the mayo, yoghurt, tsp peri sauce, garlic, lemon juice with a pinch of salt.

Use ¼ of the sauce to toss with the chopped lettuce.

Slice the rolls and add the lettuce to the bottom. Top with the cooked chicken, a tsp of peri sauce on each, sliced tomato, red onion, and add the remaining mayo sauce to the top of the roll.
