BBQ Chicken & Bacon Cheesy Potatoes
Perfect for an easy dinner recipe and one you can meal prep ahead of time!

Add the potato to the airfryer. Season with a tsp of bbq seasoning and dried parsley. Rub in thoroughly before air frying for 20 minutes at 190 degrees celsius shaking throughout. Or bake in the centre of a preheated oven for 35 minutes at the same temperature.

Fry off the diced onion, red pepper and chopped garlic until softened.

Season the chicken with a tsp of the bbq seasoning.

Add the chicken to the frying pan, fry until cooked through. In a separate pan fry off the bacon for a few minutes until crispy.

Add the cooked potatoes into the pan. Toss to combine before adding in the bbq sauce. Stir well and add the water to loosen.

Top with both of the grated cheeses before returning to medium heat covered.

When the cheese has melted, remove the pan from heat. Drizzle with the peri mayonnaise, add the cooked bacon and finish with the parsley.
