Creamy Tomato Parmesan Sausage Pasta

This pasta is the ultimate comfort food to get you through these gloomy nights Pan fried sausage is mixed with a quick tomato herb cream cheese sauce, tossed with pasta and parmesan Ready in 20 minutes its a perfect midweek meal for when you really can’t be bothered to spend ages cooking

    Start by bringing the pasta to boil in a large pan of salted water. Once cooked, drain and reserve the pasta water listed.

    Fry off the onion and garlic for 2 minutes until softened. Then add in the sausage meat, breaking up into smaller pieces. Cook over medium to high heat for 8 minutes until browned and cooked through.

    Once cooked, add in the tomato puree, the Italian herb seasoning, smoked paprika and to taste with salt and pepper before adding in the cream cheese and pasta water. Stir until combined. Return to heat for a few minutes until the sauce has slightly thickened.

    Add in half of the parmesan, stir and then add in the cooked pasta.

    Serve with the remaining parmesan and chilli flakes if using.
