Creamy Chicken, Bacon and Mushroom Pasta

If you’re a mushroom fan you need to try this easy pasta recipe . I can be touch and go with mushrooms but when there’s a creamy sauce involved you bet I’m in. Add some golden chicken strips and crispy bacon pieces you’ve got an absolutely banging dinner

    Season the chicken all over with salt and pepper. Add to the frying pan. Cook for 10 minutes turning part way through until fully cooked and remove from the pan.

    Grill the bacon according to packet instructions. Once cooked, cut into strips.

    Once the chicken has cooked, add the onion to the pan. Fry for a couple of minutes until soft.

    Bring the pasta to boil in a large pan of salted water. Once cooked, drain and set to one side.

    In the frying pan, add the sliced mushrooms frying until golden and brown. Then add in the chopped garlic, frying for a minute before adding the crumbled chicken stock cube and pasta water. Leave over medium to high heat to reduce.

    Whilst the sauce reduces, slice the chicken into strips. Add the chicken back to the frying pan, along with the cream and herb seasoning. Mix well to combine and return to heat.

    After a few minutes, stir through the parmesan followed by the pasta, tossing well to combine.

    Serve the cooked pasta, with the bacon strips on top followed by the chopped parsley.
