Creamy Chicken and Bacon Tomato Gnocchi
This was utterly delicious! I love having gnocchi for dinner it’s super quick and easy to throw together midweek and adds a perfect bit of comfort food in these colder months

Season the chicken with the smoked paprika, Italian herb seasoning, salt and pepper to taste. Set to one side.

Add the diced bacon to a pan, frying for 4-5 minutes until cooked through. Once cooked, remove from the pan and set to one side.

In the same pan, add the cubed chicken. Fry until cooked.

Optional but I recommend to pan fry the gnocchi for a couple of minutes.

Once the chicken has cooked, add in the chopped garlic fry for a minute, before adding in the tomato puree, chopped chilli’s, cream cheese and chicken stock. Mix well to combine before adding in the gnocchi. Return to heat for a few minutes until the gnocchi has fully cooked.

Stir through the parmesan and half of the chopped parsley.

Serve with the diced bacon on top and the remaining fresh parsley.
