Cheesy Taco Beef Pasta
One of our favourite quick and easy pasta recipes and a recipe perfect for meal prepping ahead of time!

Add the garlic to the pan along with the onion and peppers. Fry for a few minutes until the veg has softened.

Meanwhile, bring the pasta to boil in a large pan of salted water. Cook as directed on the packet and drain once cooked.

Once the veg has softened, add in the beef mince. Fry for around 7 minutes or until browned. Add in the taco seasoning, water and chopped tomatoes. Leave over medium heat to simmer.

Combine the cooked pasta with the beef. Top with the cheese before returning to heat for a few minutes covered whilst the cheese melts.

Finish with fresh parsley and ranch dressing if using.
