Steak with Sauce Fiorentina

A simple and flavorful steak dish with a lighter sauce, inspired by the chef's legendary first chef, Sam Oteo.

    Season the steak and sear it in a pan.

    Wet-cook the steak in a pan with fat.

  3. 3

    Cook the steak to desired doneness and let rest for 10-15 minutes.

    Chop garlic and ginger finely and squeeze fresh lime juice over the top.

  5. 5

    Finish with a good squeeze of olive oil and some coarse sea salt.

    Slice the steak and spoon over the fiorentina sauce.


Notes

Serve with roasted veg and a piece of bread to mop up the sauce.
