Sear up your bacon in a pan until crispy and delicious.

Add your sliced garlic and sweat down in some bacon fat.

Add your beans into the same pan to infuse with the garlic and bacon.

Reserve when warmed through.

In a pot, bring water to a simmer.

Add salt and vinegar.

Crack your egg directly in and poach for 2-3 minutes until desired doneness.

To plate, add your warm beans to your bowl, your poached egg, and cover with Parmesan.

Add some salt to taste (only if needed!), cracked pepper, olive oil and then your bacon.
