One Pot Cajun Spiced Rice Bake

Preheat the oven to 200 degrees.

Fry the onion pepper and garlic until just browned.

Add the mince meat and fry until cooked through.

Add the lentils, passata and all of the additional ingredients above. Leave to simmer for 10 minutes.

Add the cooked rice to the pot and gently mix together.

Place everything in an oven proof dish. Top with mozarella and grated cheese.

Transfer to the oven and bake for 45 minutes.

Garnish with chopped spring onions, avocado and sriracha mayo!
