Caramelised Banana Upside Down Cake
Perfect for those mushy left over bananas, So scrumptious and only takes 10 minutes!

Set your oven to 170°C with the fan on.

Line a cake tin (about 20cm) and lightly grease it.

Melt the butter and sugar together, then pour this mixture into the bottom of your prepared tin. Arrange banana coins on top.

Combine the milk and vinegar in a bowl and let it sit until it thickens. Add all wet ingredients into a bowl.

Sift the dry ingredients into the same bowl and gently mix everything until just combined.

Pour the batter into the tin and bake for 40-45 minutes, or until the top is golden and a knife inserted into the center comes out clean. If the sponge begins to brown too much, lightly cover it with aluminum foil.

Allow the cake to cool before flipping it and removing it from the tin! Serve with extra caramel sauce if you wish.
