Veggie Pesto Pinwheels
These veggie pesto pinwheels are packed with veg and taste delicious! They freeze so well and they are great for an easy lunch.

Unroll puff pastry and spread 2-3 tbsp of green pesto thinly.

Grate courgette and squeeze out moisture in a clean tea towel.

Sprinkle grated courgette over the pesto.

Grate carrot and sprinkle over the courgette.

Grate cheese and add on top.

Add chopped spinach on top.

Roll tightly and cut into equal rolls.

Bake at 200°C for around 20 minutes until lightly golden.
