These sweet potato tortillas are a great healthy snack or lunch idea! We add some cheese to ours and they are so delicious and easy to make, all you need is a sweet potato & flour!

    Boil your sweet potato until soft.

    Drain and add it to a bowl and add your flour, mix together and knead until you get a dough.

    Portion the dough into 4 little balls and flour your work surface.

  4. 4

    Roll flat until it’s as thin as a tortilla/wrap.

  5. 5

    Heat up a frying pan with a little oil and put your flattened dough in the pan.

  6. 6

    Fry until lightly brown on both sides.

  7. 7

    I add cheese and fold it up and fry until it’s melted.
