You won’t believe this full-flavoured ragù is vegetarian/vegan ! It’s super rich from the mushrooms, green lentils and herbs and has a clever dash of marmite for great savoury flavour.

    Peel and chop your carrot and red onion and fry until soft.

    Add your mushrooms to a food processor and blitz until fine.

  3. 3

    Then finely chop your garlic.

  4. 4

    Add your mushrooms, garlic and dried oregano into your carrot and red onions. Cook for 3-4 mins.

    Dissolve your tomato paste in 200ml hot water with your soy sauce and marmite (you can skip marmite to keep salt down for under 1s).

    Add the tomato stock into your pan with the chopped tomatoes and lentils (drained). Cook for 12-15 mins until reduced.

    Mix into your linguine!
