I LOVE this pasta sauce, it is so tasty and simple to make and packed with veg!

    Chop up the veg roughly and fry in a frying pan with some olive oil until lightly browned.

    Add in the spinach until it wilts.

    Get your blender and add all the veg, and add the chopped tomatoes, stock water, oregano, and some salt and pepper.

    Blend until smooth!


Notes

A hack for storing this frozen is to fill a silicone muffin tray, freeze, and then store in a sealable bag in the freezer.
