Combining 2 of my favourite things, crumpets and halloumi, in this breakfast bake.

    Chop 8 crumpets into cubes, then set aside.

    Grate 100g halloumi, then add to a large bowl.

  3. 3

    Crack in 4 large eggs & add any seasonings/herbs or spices of your choice, then mix well.

    Add the chopped crumpets and give it a good stir until combined.

  5. 5

    Add the crumpet mixture to a greased baking dish.

  6. 6

    Oven bake at 180C fan/200C or air fry at 180C for 25 mins or until the crumpets are golden and starting to crisp up.

    Scatter another 25g grated halloumi on top, then place back in the oven/air fryer for a further 5-10 mins or until the halloumi is crispy.
