Air Fryer Halloumi & Courgette Fritters
Crispy on the outside and soft in the middle, the salty halloumi definitely takes the fritters to the next level.

Grate 1 medium courgette. Squeeze out as much excess liquid as possible in a clean cloth/tea towel, then add the courgette to a large bowl.

Add 40g grated halloumi, 40g plain flour, a pinch each of salt & pepper and any herbs/seasonings of your choice to the courgette, then give it a quick stir.

Crack in 1 large egg, then mix until combined.

Spoon the batter into 5-6 rounds in a lined air fryer basket/baking tray, using around 1 tbsp per fritter. Spritz with a small amount of oil.

Air fry at 180C or oven bake at 180C fan/200C for 12-14 mins until golden & crispy (carefully flip halfway through cooking).

Alternatively you can pan fry the fritters in a non-stick pan with a glug of oil for 3-4 mins on each side.

For the harissa yoghurt, stir 1/2 tsp harissa paste into 1 heaped tbsp Greek/natural yoghurt.
