Caramel Apple Crumble Banana Bread
The caramel flavoured banana bread is packed with chunks of sweet apple, warming cinnamon and a caramel swirl through the centre, with a buttery crumble topping.

Peel 2 medium/1 large ripe bananas, add to a bowl then mash with a fork.

Add 1 large egg, 150ml milk (any) and 2 tbsp caramel. Mix well.

Blend 100g rolled oats in a food processor & add to the bowl along with 100g self raising flour and 1 heaped tsp ground cinnamon, then mix until combined.

Peel 2 eating apples, then chop into small cubes. Stir into the batter.

Grease/line a cake or loaf tin, then spoon in half of the batter, swirl another tbsp caramel through the centre, then add the remaining batter.

For the crumble topping, rub 50g plain flour, 30g golden caster/light brown sugar, 30g softened butter and 1/2 tsp ground cinnamon between your fingers until crumbs form. Scatter the crumble over the batter.

Air fry at 170C for 30-35 mins. If you have a bake setting on your air fryer use this, otherwise the regular air fryer setting is fine. You can check if it is cooked by inserting a skewer/sharp knife into the centre which should come out clean.

Alternatively oven bake at 170C fan/190C for 35-40 mins.

Drizzle with more caramel, then either serve immediately while still warm or allow to cool completely on a wire rack before storing in an airtight container. Enjoy!
