Sourdough Pastry Dough
Golden Syrup Sauce

Preheat the oven to 375F. Grease a 8x11” (8” or 9” square also works) baking pan with butter. Set aside.

Prepare golden syrup. In a medium saucepan over medium-high heat, add all of the ingredients for the golden syrup. Bring to a boil, and let boil for 5 mins, then remove from heat and set aside.

Prepare the sourdough pastry dough. In a medium bowl, whisk together the sourdough discard and milk.

In a separate large bowl, add the flour, salt, and grated cold butter. Toss to coat.

Add the sourdough/milk mixture to the dry ingredients, and mix until just moistened. If it’s too dry, add 2 more tbsp of milk.

Transfer the dough to a lightly floured surface, and slightly knead until it comes together more.

Roll the dough out into a large rectangle (~30x12” and 1/8” thick).

Make 9 even marks along both lengths of the dough. Cut 18 triangles connecting the mark from the top to bottom.

Slice the apples into large slices, getting ~6 large slices from each.

Mix together the brown sugar and cinnamon in a small bowl for filling.

Assemble. Take one of the dough triangles and sprinkle ~2 tsp of the cinnamon brown sugar mixture along the surface. Place an apple slice at the bottom, and roll it up like a croissant. Repeat with the remaining dough, filling, and apples.

Place the dumplings in an even layer in the prepared pan, and then pour the golden syrup sauce all over, filling it ~3/4 of the way (there will be extra).

Sprinkle turbinado sugar all over.

Bake at 375F for 40-50 mins, until golden and bubbling.

Serve warm with a scoop of vanilla ice cream and extra golden syrup sauce.
