Preheat the oven to 350F. Line two baking sheets with parchment paper; set aside.

Prepare the apple pie filling. In a saucepan over medium heat, melt the butter. Add the chopped apples, brown sugar, maple syrup, cornstarch, and cinnamon. Heat until the mixture starts to bubble. Stir and cover and cook for 5 mins. Remove from heat once the mixture is thickened and the apples are soft. Set aside.

Prepare salted caramel. Combine the salted caramel ingredients in a medium bowl. Mix until smooth.

Make the cookies. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

In a separate large bowl, cream the butter and powdered sugar until light and fluffy. Add in the egg, avocado oil, and vanilla. Beat until combined.

Add the dry ingredients to the wet; mix until just combined.

Use a large (3 tbsp) cookie scoop to scoop cookie dough balls, and roll each ball into a circle. Roll the dough balls in cinnamon sugar, then place on the prepared baking sheets.

Use a 1/8th measuring cup or the bottom of a small jar to press a circle into the middle of each cookie.

Bake at 350F for 8-9 mins. Remove from the oven, press the measuring cup back into the hole, and bake for another 1-3 mins until the edges are golden.

Cool the cookies.

Fill each hole with the apple pie filling, and then drizzle with salted caramel.
