Roasted Caramelized Honeynut Squash with Candied Pecans and Thyme

    Preheat oven to 400 F;

    Wash, cut and de-seed your squash;

  3. 3

    Melt butter and mix with honey, brown sugar, vanilla, cinnamon, nutmeg and brush squash;

  4. 4

    Roast for about 40 mins as you brush more butter mixture once half way through;

  5. 5

    To make the pecans- add pecans to a pan with 1 tbs of the butter/honey mixture and cook for a few minutes; place on parchment paper to cool;

    Once squash has roasted, finish with candied pecans, more honey, thyme and enjoy
