Preheat oven to 400 F

Wash pumpkin, remove seeds and place pumpkin on a baking sheet

Roast until fork tender for about an hour and a half depending on size

Peel and add to a food processor and blender

pour into a pot, semi cover and simmer until it thickens to a desired consistency and then store in jars in the fridge
