Pumpkin Spice Oreo Mooncakes
I turned Oreos into mooncakes... again.
Ingredients

Divide the Oreos into cookies and cream.

Portion the cream into 8x 10g balls and then freeze them while you prepare the caramel.

Heat the sugar in a BIG pot on low heat till fully melted and dissolved.

Turn off the heat, and stir in the butter and cream vigorously.

Let the caramel chill in the fridge while you make the pastry.

Blend the Oreo crackers till a fine powder, then slowly add in milk until the powder starts to clump up and holds its shape when squeezed.

Cover the 10g cream balls with 15g of caramel, then freeze them 10-15 minutes before covering with 25g of pastry dough.

Press firmly into the moulds, and either freeze or fridge until you want to enjoy them.
