Double Cheese Steak Quesadillas
A nice and easy weekend dinner.

Melt the butter and mix in the flour to make a roux and cook for 1 minute until golden.

Gradually add the milk, whisking constantly to avoid lumps. Stir on the heat until thickened, about 3-5 minutes.

Stir in the grated cheese, cream cheese, salt & pepper, garlic powder, and cayenne pepper. Mix until smooth and creamy.

Heat 1 tbsp olive oil in a large pan until very hot.

Season the steak slices with salt, pepper, garlic powder, and smoked paprika. Sear the steak slices for 3-4 minutes until browned. Set aside on a plate.

In the same pan, add 1 tbsp olive oil. SautΓ© the peppers and onions until slightly caramelized, then add the steak back in for a minute, donβt overcook it.

Lay a flour tortilla on a clean surface. Spread a thin layer of cheese sauce on half of the tortilla.

Add the steak mix, a few coriander leaves and the jalapenos (if using) and sprinkle with the grated cheese on top.

Fold the tortilla over to seal and pan fry until golden brown and the cheese inside has melted.

Slice each quesadilla into 4 wedges and serve with sour cream and salsa, enjoy!
