    Marinade the lamb for up to an hour with olive oil, garlic powder, rosemary, and thyme.

    Preheat the air fryer to 180Β°C.

    Add salt and the lamb rack to the air fryer.

    Cook for 20 minutes.

    Leave to rest in the air fryer for 15 minutes.

    Slice the lamb chops and drizzle with homemade mint sauce.

    Make the mint sauce by dissolving sugar with vinegar, adding mint, salt, and a dash of boiling water, and steeping for at least 30 minutes.
