Soak the dried fruit in the hot tea, cover and leave to soak overnight.

Preheat your oven to 160c and line a loaf tin ready for the batter.

In a large bowl add the flour, sugar, spices, orange and lemon zests and 1 egg.

Add the cooled fruit and tea mixture and combine it altogether to form your cake batter.

Transfer into your prepared tin and bake for 45 -50 minutes.

When it comes out of the oven, pour oven the whiskey, then cover it and leave until the next day, this step isnβt essential, but I find it really adds to the flavour and make the cake lovely and moist!

Serve warm or cold with lashings of creamy Irish butter! Enjoy!
