    Pat dry 2 salmon fillets and put them in a shallow ovenproof dish.

    In a bowl add a small chunk of grated ginger, 2 tbsp sweet chilli sauce, 2 tbsp honey, 2 tbsp mirin, 4 tbsp light soy sauce, 2 tsp sesame oil and mix well. Pour over the salmon.

    Transfer the salmon to preheated oven at 190°C and cook for 12 minutes.

    Serve with steamed rice, drizzle over the remaining sauce and enjoy.
