Beef & Spring Onion Stir Fry

    Thinly slice the steaks of choice into thin strips. Put them in a bowl and add light soy sauce, oil, cornflour (cornstarch) and mix well to coat the meat.

    Thinly slice a thumb size piece of ginger into matchsticks and slice the spring onions (scallions) into an inch or so pieces. Keep the white and green parts separate.

    Make the sauce. In a bowl add light soy sauce, hoisin sauce, sesame oil, white pepper, hot water and mix together.

    Heat oil in a wok and once hot add the beef. Let it sear on one side for 30 seconds on high heat, flip the strips over and repeat. Remove with a slotted spoon to a plate, wipe the wok clean.

    Reheat the wok with oil and over high heat add the ginger and stir fry for 30 seconds. Add the white parts of the spring onions, stir fry for 1 minute.

    Add the beef back in, the sauce, the green part of the spring onions and stir fry for 2-3 minutes until the sauce has nicely coated everything. Serve and enjoy.
