Easy Teriyaki Chicken

In small bowl mix Mirin, Shaoxing cooking wine, light soy sauce, honey and mix well.

Dice 2 chicken breasts into small bite size pieces.

Finely chop 2 garlic cloves and a thumb sized piece of ginger.

Heat 1 tbs oil in a pan and add the chicken. Sear on high heat for 1-2 minutes until no longer pink and starting to brown.

Add the garlic, ginger, the sauce and stir together. Bring to a simmer.

Simmer for 5-6 minutes until the sauce has reduced and is starting to thicken. Serve and enjoy.
