Lemon Pepper Chicken Wings
Inexpensive and super finger licking delicious

Separate 1kg chicken wings from the drum and the flat (discard the wing tip) and put them in a large bowl.

Add 2 tsp lemon pepper seasoning, 1 tsp paprika, 1 tsp salt, 1 tsp ground black pepper, 1 tsp onion powder, 1 tsp garlic powder, 2 tablespoons cornflour & 1 tbsp olive oil. Mix well to thoroughly coat each piece.

Put the wings to a large nonstick oven tray and put them in a preheated oven at 190°C for 35 minutes turning them over half way through.

Make your lemon pepper sauce by melting 100g unsalted butter in a small pan, add the zest and juice of 1 lemon, 3 tsp of lemon pepper seasoning and 2 tbsp honey. Whisk it all together and simmer for 2-3 minutes.

Rest the wings for 5 minutes and when ready to serve drizzle the lemon pepper sauce over them.
Notes
If you can’t find lemon pepper seasoning make your own! Zest 5 lemons and add 4 tbsp ground black pepper to the zest. Spread it out on baking tray and pop into a preheated oven at 100°C for 15 minutes until the lemon zest has dried. Add a tsp salt once cooled and store in an airtight jar.
