Honey Ginger Chicken Stir Fry

    Dice 2 chicken breasts into bite size pieces and put them in a bowl. Add a heaped tsp of cornflour (cornstarch) and toss through to coat each piece.

    Slice 2 or 3 spring onions keeping the white and green parts separate.

    Heat 1 tbsp oil in a wok and once hot add the chicken and stir fry for 4-5 minutes until no longer pink and starting to brown.

    Add HALF the sauce to coat the chicken and stir fry for 1-2 minutes until thickened.

    Add the whites of the spring onions, the rest of the sauce and simmer for 2-3 minutes.

    Serve over steamed rice garnish with the green part of the spring onions and enjoy.
