Garlic Chicken Stir Fry
Minimal ingredients maximum flavour and super easy

Slice 2 large chicken breasts into fairly large thin pieces.

Slice 3 spring onions into batons

Slice 4 garlic cloves

In a bowl or plate add 3 tbsp cornflour (cornstarch)

In a bowl add 2 tbsp light soy sauce, 2 tbsp Chinese cooking wine (shaoxing) and a pinch of sugar, mix well.

Dredge the chicken through through the cornflour and shake off the excess.

Heat a wok or pan with 5 tbsp oil and once hot add the chicken (may have to do it in batches) and fry for 2-3 minutes until starting to turn golden. Remove with a slotted spoon to a plate lined with kitchen paper. Discard the oil and wipe the wok clean.

Reheat the wok with 1 tbsp oil and over medium heat add the garlic and spring onions, stir fry for 1-2 minutes until fragrant and be careful not to burn the garlic.

Add the sauce and the chicken back in and stir fry for 1-2 minutes until the sauce has slightly thickened and everything is nicely coated with the sauce. Serve and enjoy
